The other day I finally ventured over to the grocery store. The cabinets were getting bare and the fridge was pretty empty. I’m not a huge fan of Shoppers grocery store that is the closest to my house. It’s okay, but not always the best quality or atmosphere. Next is Whole Foods. My love. Of course i’d love to always shop there if it was possible for my wallet. I tend to buy specialty products there mostly. The other night I decided to venture on over to the other side of the Harbor to Canton to enter into the doors of Safeway. I think Safeway is a good quality grocer and there actually happened to be lots on sale that ended up saving me a good $20 off of my total bill. I’ll take it.

Since I had so much fresh food I decided to get to cooking. I had been swooning over Heidi’s website 101cookbooks and had jotted down a few must-try recipes.

First on the list was her Coconut Red Lentil Soup. It was a rainy day in Baltimore and couldn’t have been more perfect for a soup for dinner. I followed the recipe exactly except for the addition of golden raisins. I think that would have made this soup even better. The flavors were amazing and it was comfort soup at it’s finest. I made some long grain brown rice and threw it on the bottom of the bowl before I ladled the soup over it. Bookmark this soup for the next time you’re in the mood for something warm. It will not disappoint. I promise.

Once we were finished eating I separated the leftovers into Tupperware for pre-made meals. Having made extra rice on purpose for the sole reason of creating her Mushroom Casserole recipe for future quick and easy pick up meals I got to cooking. This woman is brilliant! Such satisfying and hearty veggie meals that are quick and simple to create.

I only made a small casserole sized portion of this recipe and this small loaf pan was perfect. I had the casserole for lunch today along with a side salad and it was marvelous. Kept me full and satisfied all afternoon.

    YUMMM, love that website too. Food looks great, and perfect with the yucky weather we had. And look at little Eden, so cute!

    Dislike Shoppers. I was just in there tonight and there was some sort of commotion over a guy who wasn’t allowed in there. I don’t know, it’s just not a very peaceful experience. And they never have everything I’m looking for. LOVE WF, of course. And the Safeway is very nice. I just wish we had something better in our ‘hood!

    my boyfriend hates mushrooms too. i try to sneak them in our meals though hoping to change his mind.

    I actually don’t like the Safeway. Its okay in a pinch but I generally end up at Whole Foods.

    As for the March for Animals. I always want to do this & wish I could take my dogs but they “act out” around other dogs. I just figured it would be a huge hassle. But it’s awesome that you’re doing it! I’m a big supporter of humane society-type establishments.

    I forgot to answer the question you posted on my blog, about the fuel belt: I love mine, it takes awhile to get used to, but it is so much more handy to have everything you need with you, especially on longer runs.

    Aww I wish I lived close by where I could go and support that great cause. I’m such a softy for animals too. I wasn’t even a dog person until I met my husband. Now I don’t know what I would do without my Bella. 🙂 That is such a precious picture of Eden. (I just Love that name!)
