Last night my sister was coming over for dinner, a movie, and a sleepover. I decided to make the Veganomicon Black Bean Burgers. A favorite of mine, but Allison was skeptical. Eh, no meat?

No problem. I whipped up the black bean burgers and made some sweet potato fries as well. Chopped them up, tossed lightly in olive oil, salted, and baked in a 400 degree oven for about 40 minutes. Don’t forget to flip!

I crossed my fingers as she took her first bite.

A success! She enjoyed it compltely and was surprised at how full she was from the burger. We had 1 big patty each with sp fries and tons of ketchup.

Then it was time to bust out my neglected cookbook. I had bought Vegan Cupcakes Take Over the World a long time ago but had yet to make a single recipe from the book. It was time. The other day I finally bought some cocoa powder and I knew I wanted to make some chocolate cupcakes. Only problem? No confectioners sugar for the frosting. I was limited in time and didn’t have enough time to run out to the store and get some, let alone lose my parking spot. City parking is never fun. I browsed the cookbook and towards the back found the icings and toppings.

Rich Chocolate Ganache? oh yes. Simple and delicious, I whipped it up to use for the frosting substitute. It wasn’t thickening as much as i’d hoped for so I stuck it in the fridge, and cooled the cupcakes while we put in Bride Wars.

After about 30 minutes I went back, the cupcakes were perfectly cooled, the ganache amazing and thick. I topped them off and devoured.Β  Just call me betty crocker πŸ™‚

I had mine with a small mug of soymilk and savored each bite. These were amazing, and SO easy to make! I can’t wait till I have to bring in a baked good somewhere, or to try out one of their other amazing recipes. I can’t recommend these two cookbooks enough. They’re such great cookbooks to own. You won’t regret it if you buy it.

Today is technically my Friday. I have off tomorrow and am driving to NY tonight. Going to get my long run in this weekend, and am actually really excited because I’ll be running it in the Hamptons. I’ll get to see beautiful scenery around me and hopefully get to know the area a little better. They don’t have any sidewalks around there, so i’ll be runnin on the road.     First of all, I love the new header, so cute!

    Secondly, that looks amazing! It is too hot to bake right now, or I would definitely give it a shot.

    YUM! I keep seeing the veganomicon but haven’t bought it yet bc well.. im not vegan. lol! And i wish it were bigger! silly reasons, huh?

    Love the new header! And black bean burgers are the best. I made them for my meat eating parents once and the taste test was just as successful!

    what a great feast you cooked for your sister! i love cooking my yummy new health foods for family members. i feel like they are always a wee bit wary, but always a big fan of everything in the end!!!

    I haven’t tried either of those…mostly because I’m always scared the recipes will be hard and then I’ll just quit. but you make it sound good!

    The Veganomicon is one of my all-time favorite cookbooks! I have recommended this to a ton of people (mostly non-vegetarians) who have all loved it as well.
