Oh my i’ve been busy. The marketing coordinator at work is on vacation in London so i’m in charge of all her proposals. Granted.. I’m a graphic designer, and not a marketing coordinator, so I’m stressed beyond belief hoping that i’m doing everything right!Β  Sorry i’ve been slacking on commenting on your guys posts, but i’ll be back full force when all these proposals are done!!! yikes i already can’t wait till the week is over!!!

Lets see… dinner monday night was a new one for me. Zucchini boats πŸ™‚ I cut the ends off of a zucchini and then put it in boiling water for 10 mins. I waited until it was cool enough to touch, cut it in half and scooped out the insides. My filling was diced mushrooms, onions, garlic, red pepper flakes, and some marinara sauce. I sauteed all that up and then put it inside the zuchini halves. Threw a little parm on and put it in the oven at 350 for 15 minutes and it was done! This was delishhhh and to give me a little more fill I added on a side salad to the mix.

Yesterday for breakkie I had the same yogurt almond butter mess and loved it yet again! These are great in the warmer months. Oatmeal has kinda been on the backburner since its gotten warmer out, might have to bring it back for a little reunion soon though πŸ™‚

The other day I decided to use up my dates and make some more homemade larabars! I made the almond coconut ones and a new experimental flavor cranberry walnut coconut. I am absolutely in LOVE with the almond coconut. It tastes exactly like the coconut cream pie larabar. The cranberry walnut coconut one was pretty good but a little too sweet for my liking. Next time I’m going to put half the amount of dates and cranberries in it. I kept them in the fridge and they hardened up nicely. I brought one sliver of each yesterday as a snack. I’m going to make my family some of the almond coconut ones to bring them this weekend. My dad’s gonna love it!

For lunch I went home and made a wrap. and a glorious wrap it was! Smoked turkey, artichokes, spinach, roasted red pepper, hummus, feta grilled up on the foreman. Heaven in wrap form. Another side salad and the meal was a complete success!

When I came home from work I decided to take advantage of the weather and go for a run. I’m not sure if its because of the 30 day shred and the consistent strength moves, but my legs have been feeling like dead weights lately when i’ve been running. Running is hard again, not as enjoyable. I think maybe my muscles are just learning to adjust to the strength training since i haven’t been doing it much. Hopefully they’ll adjust sooner than later and my runs will be longer and feel great again.

I also am getting a free month pass to the gym near my house on Sat. They have TONS of classes and ones like body pump, body combat, etc, so this will be a great addition to my schedule for a little bit while its free πŸ™‚

Yesterday at work there was a luncheon so they had leftovers. They had catering by Panera so I was able to snag half a medi veggie sandwich and save it for dinner. This is my all time fav sandwich from them and i LOVE the bread it comes on! WIsh I had grabbed two halves, this wasn’t enough! I couldn’t think of anything else to eat with it, so I made 2 scrambled eggs and was perfectly satisfied.

Last night I decided to spend 3 hours of my time watching the biggest loser finale. I mean really? 3 hours??? I CAN”T BELIEVE the transformations! its absolutely insaneeeee.Β  I also heard that Jillian isn’t going back next season? well see! I do love her butt kicking workouts! Speaking of… i’ve still kept strong with the shred. Details in the shred page! woooopppp!

This morning I had a breakfast cookieee πŸ™‚ But this time I switched it up a little. I added on some yogurt on top and then some blackberries. I’ve seen Meghann do this with yogurt and fruti and I wasn’t sure if i’d ilke the combo but it was amazing! AND it has kept me full for longer so far. This is a good signnn! It def gave it more staying power and i’m lovin it.

I’m crossing my fingers tonight won’t be an extra long work night!! I’m not sure though, it might be a late one. I’m going to cram in as much work as possible today and hope to get most of it done. I hope you all have a WONDERFUL day and happy hump day!! xoxo

    Yum to the boats! I’ve been meaning to try those for a while but always forget to buy zucchini! No more – I’m going to try it soon because yours sound fantastic!!

    That Panera sandwich is one of my favorites! The crust, love it!! Good luck with work!!

    Your food looks like a typical day for me, especially that divine wrap. I have all those ingredients in my refrigerator so I should try that one out. Zucchini boats…heck yah!

    Hey Ash,
    Your zuxxhini boats look awesome! I’ve been wanting to pair up zucchini and marinara a lot lately but this is a really creative way to make it more substantial and pretty πŸ™‚
    Also, the homemade Larabars..how did I miss that on your blog?! I want to make some and the coconut cream pie is my favorite flavor. I’ll take a look back to see if you posted your combination.
    Abou tthe running–I tried running again today and it was SO hard! I was shocked–I thought it would be easy since I had the long run on Sunday. The trainers at the gym said it might take a while to get back into it because the muscles kind of cease. I know it’s been a few weeks since your race but maybe your body is still figuring things out? Don’t get dicouraged!

    Love making zucchini boats! I usually just do a simple marinara and cheese, and they are so filling. Yum! I sometimes trick myself with some turkey pepperoni and bread crumbs… it’s like pizza!

    Why hello homemade Laras! Those look beautiful and tasty. And you are killin me with those zucchini boats-yum!

    That Panera bread really is fantastic. I think if I sat with a whole loaf of it, I’d eat more than half of the whole thing. Anyway… I hope you have a great wednesday!

    You should try Swiss Muesli! Basically just combine 1/2 cup oats, tsp of honey, and 1/4 cup liquid (I used almond milk) and leave it in the fridge overnight. I had it for the first time last week and it was so good! Now you can eat cold oatmeal all summer πŸ™‚

    So sorry that you’re pretty stressed at work! The week is halfway over, Friday will be here before you know it πŸ™‚

    Those boats look AWESOME! I love any kind of roasted or baked veggies…really gives them a great flavor! What kind of panini machine do you use for your wraps? I need to get myself one really bad! πŸ˜›

    I slept in and didn’t do my shred this morning like usual 😦 I will DEFINITELY be doing it tonight, I just prefer doing it in the mornings. Oh well, I am feeling way stronger since doing the shred everyday, but you’re right I think it’s messing with our running. I did a little two mile run yesterday and I felt SOOOO tired, my legs were aching!

    hope things at work are easier today! that panera bread rocks!!! i definitely have bought a loaf of it before πŸ™‚ YUM!!!!!! i totes watched TBL but 3 hours was kinda long. i thought helen seemed maybe too skinny?!? i will be bummed if jillian leaves…i think the contrast between her and bob is the best!!

    sorry you are so stressed with that lady in london- I hope you get through all your proposals! I bet it will show your bosses how awesome you are though, so worth the effort!

    Zucchini boats are the best way to use them when they are so prolific over the summer – but I have to add Italian sausage to mine, otherwise my hubby wouldn’t eat them! πŸ˜€

    Biggest loser transformations are REDICULOUS! Oh my – couldn’t get over a few of them. I tivoed it and fast forwarded through the vast majority – too much recap for me – argh!

    You’re turning more and more into a chef!!! I’m loving the zucchini boats. Oooh and i always top my oatmeal with yogurt and fruit, but i still have yet to attempt the ultimate Ash cookie. DEFINITELY wanna make it soon…you make it look so tasty!!
