scramble you up
Happy Fridayyy!! It’s finally sunny and beautiful outside 🙂 but thunderstorms are in the forecast for the night… lets hope they just decide to never come!
Last nights dinner was such a good time. I met up with my friends Stacey and Brooke. We decided on a small mexican restaurant by my house called No Way Jose. I’ve never been before, but I’d heard such good things from my roomie Lauren that I knew it was going to be good.
Of course we started with chips and salsa. The salsa was so good and fresh, lots of chunky tomatoes and cilantro, just like my mom would love. I ordered the vegetable burrito and it was amaazzzing! Not too big that I felt overly stuffed and came with a side of pino, black beans, and some spanish rice. What was so fun about this place was that if you ordered 2 entrees you got to choose from a free pitcher of margaritas or beer. We went with the margarita, and I had one glass. I’m not really a big marg fan bc I don’t like tequila really but this was tasty. I can see myself venturing into No Way Jose more often 🙂

This morning I woke up and had a bowl of kashi h2h mixed with my mywaycereal mix and some unsweetened vanilla almond milk.

This afternoon for lunch: egg scramble. Can you tell i’m running low on groceries? Eggs have been getting me through the week. I made a new scramble and I absolutely LOVED it. Sauteed some onions, black beans, threw in some cumin and 2 scrambled eggs. THEN added in my sweet potato homefries. To make the SP homefries I just chopped up a small potato into small cubes and then put it in a microwavable bowl and added in 1 tbsp of water. I covered the bowl with saran wrap and microwaved it for 6 and a half minutes. I checked to make sure they were tender enough, then threw them on the pan with a little olive oil and browned them up. Really fillling meal and i just can’t get enough of the sweet potato and black bean combo.
Well my friend Maria from school isn’t coming anymore tonight bc shes sick 😦 but my friend Megan is still coming! Can’t wait for a fun night. Tomorrow morning I’m getting up early to go back to Columbia. My dad has to work on Sun so we’re celebrating mothers day tomorrow instead. We’re thinking either dimsum or a new Chinese place my mom has heard was good. Lots of food pics to comeee. Enjoy the weekend guys! Hopefully we have good weather, im hoping to get some awesome runs in.
