yahoooo fridays here! All I can think about is my long weekend ahead and i’m so so excited!

Yesterday for dinner I went back home to Columbia. Gotta love mom’s cooking. She had a spread of things out on the table when I got home. Thin sliced chinese pork chops, white rice, chinese greens, oyster mushrooms, and tofu. yummm. This is pretty much what my entire Florida vacation food is going to be like, and i can’t WAIT πŸ™‚

I’m going to be staying in Wesley Chapel which is really close to Florida. Anyone want to meet while i’m there? I”ll be there June 10-17. I think it’d be so fun to meet the Florida blogger ladies πŸ™‚

I’m not sure why, but I feel kinda out of my element since Bikram the other day. I have been soooo thirsty, and have been drinking crazy amounts of water. I feel sluggish and exhausted and i’m assuming its from the crazy heat for an hour and a half. It was extra hot the last time I practiced so i’m assuming thats why. Usually I don’t feel this way afterwards. Hopefully I snap out of this too, I’m drinking like a camel.

Last night when I was in Columbia my dad offered me someΒ  of the fresh bagels he just got. I happily took a cinnamon raisin. I also took a little container home of cream cheese and dreamt of my breakfast in my sleep haha.

I’ve been on a no dairy kick for about 2 weeks now and it’s been going well. I’ve also been taking a new medication called align which is a probiotic that has really helped with my stomach issues. I couldn’t tell whether it was the dairy that was upsetting me, or if the probiotics were helping me so I did a dairy test today. Usually when I eat a bagel and CC i feel awful after. I’ll either eat the bagel plain or put pb on it. Today? I felt fine! I’m still going to keep mostly dairy free for another 2 weeks but it seemed like it agreed with my stomach so thats a good sign so today is my test day!

well anyways, back to the bagel. It was soo delicious and it kept me full for 4 hours. well done bagel.

Last night I also happened to pick up some CHIA SEEDS! i’d been seeing these everywhere and also have been getting them in my mix my granola and my way cereal, so I wanted to try to get some. I bought a bag and decided on a chia pudding. I made it last night and it couldn’t have been simpler. I got the recipe from the blog Swell Vegan and it was so goood! I halved the recipe and didn’t have a banana but followed the rest of the recipe to the T. I left it in the fridge overnight and this morning it was ooey gooey and puddinglike. It looked funny but tasted really good! This snack held me over really really well.

Lunch was kinda random. I had pressed 2 pieces of tofu, but then wasn’t sure what to do with them. I ended up cooking them on the stove and wondered how to eat them. I looked in the fridge and some some chickpeas, hm. I decided to sautee up some onions, throw in the chickpeas, and then throw two eggs in the mix. I had 1 whole wheat tortilla left, so I heated it up, added a little mozzerella *test day remember? πŸ™‚ * put the two pieces of tofu on top, then the egg/chickpea mixture, then threw some franks red hot. RANDOM but it was delicious!!! i am DEFINITELY making this again. I actually absolutely loved it. Nothing better than having a random concoction turn out really well. yumm.

Well guys, I’m going to try and post this weekend, but i’m not sure if i’ll be able to. Hopefully I can get to a comp πŸ™‚ If not though, have a WONDERFUL weekend and i’ll see you guys next week ❀

    Glad your stomach has been feeling better! I find I tolerate small amounts of dairy, it’s just large portions that upset me. Your lunch wrap combo sounds so good- I need to try chickpeas and tofu together!

    That wrap looks great! And don’t get my started on your mom’s cooking. It just looks so comforting and delicious.
    I’m glad you enjoyed the bagel! I really want to try chia seeds but for some reason worry about the taste! Is it quite strong?

    yummm…those pork chops look great! i used to always order chinese pork chops from a restaurant i lived close to…but i imagine homemade would be ten billion times yummier!

    hooooray for garbage lunches! that is what i call them, when you throw a bunch of stuff you have together. looked like it turned out yum. why do you gotta taunt me with that bagel? and if that is your mom’s cooking, i would love to be had over for dinner πŸ™‚ enjoy your weekend!

    Good to hear your dairy tests are working out okay for you. I think it would be very sad to live without cheese.

    YAHH on the bagel. And love love love chia seeds. My mom got me into them, along with flaxseeds too – she introduced flax and then told me about chia. Love her! πŸ˜›

    I love coming up with random combos that turn out delicious. Great way to use up leftovers as well!

    Oh my friend, please keep drinking your water. Make sure you’re eating some salt before and after Bikram. Perhaps drink an Emergen-C or coconut water immediately after class, and keep eating those chia seeds. I know you love hot yoga, but please make sure to keep those electrolytes in balance!

    The bagel looks too good! I usually OD on cream cheese and always feel sick after..but that’s just due to me eating too much of that good stuff!

    What an awesome wrap! I don’t even do eggs much anymore, but I’d be willing to go for that protein powerhouse you created.

    Mmm bagels! They are so good but I never think they’ll keep me full, so I skip ’em. Maybe I need to give one a shot soon.

    oooh hooray for florida!

    bagels NEVER sit well with me- I never eat them! I used to in college and when I was working people always brought them in so I nibbled, but I can relate to not feeling well! Glad this guy sat well with you!

    That burrito looks delicious! that was tofu not eggs?
