cheesy no more

April 15, 2009

Happy Humpday friends! Today has been a nasty rainy day, but tomorrow is supposed to be gorgeousss so thats something to look forward to!

Last night when I got home from work I popped in the Body Sculpt Core Fusion dvd. I’m going to try and make sure I do this more often because its a killer workout for me. After dinner I decided to make a calzone. I decided on BBQ chicken. I had some pizza dough from trader joes so I cut it into 1/4ths and took one for my calzone. I rolled it out and got the insides ready. I boiled half of a chicken breast and then chopped it up. I then added some sauteed onions, fresh spinach, some mozzerella cheese and some annies bbq sauce. I closed the calzone and pinched up the ends and let it cook in the oven at 400 degrees for 25 minutes. On the side I sauteed some frozen TJ veggies and added some salt, pep, garlic salt, and red pepper flakes. It was my first time making a calzone and it was so easy! i loved how it turned out.

After dinner was the Biggest Loser. I cried in this episode, I just get so happy for them! I can not WAIT till the finale!!! Last night was the makeover episode and everyone looked soo good and were so happy with their progress so far. i love this show.

Before I went to bed I did 50 pushups. In sets of 10’s and with a good rest break in between. I am AWFUL at pushups but think they are such a good, easy exercise to do. My arms are so weak so i’m hoping to get better at them.

This morning I woke up and was soooo exhaustedddd! I ate my breakfast cookie in bed πŸ™‚ hence the comforter as the background haha.

For lunch I went home and had a Wolfgang soup. Tomato Basil is so good. I love the chunks of tomatoes.Β  I had it with a ham and light cheese quesadilla.Β  yummmyyy. you can see the steam from the soup!

Even though i loveee cheese and have been eating it a lot lately, I know that it is not good for me. I am lactose intolerant but put up with the side effects because of the taste. During my CFW I had no dairy and it felt great! I’ve given up milk, but I really need to focus in on cheese and yogurt 😦 I dont’ want to but it really is the best thing for my body. It’s not happy when it eats dairy and it gives me all the signs. I need to listen to it more and stop ignoring it. I’ve decided to give it up for a month and look at how my body reacts. I know I should just give it up for good, but that seems like such a long time so if I decide on doing it for a month at first it will seem like a much more realistic goal. There really are so many dairy alternatives, so it shouldn’t be too hard. I’m hoping this one month challenge should help my belly feel better and I’m looking forward to not feeling awful after my meals. Luckily I have those vegan cookbooks that are dairy free and have amazinggg recipes.

On a sweeter note, i had two dates and some mighty maple as a snack and it did not disappoint πŸ™‚ these are the perfect dessert.

Well tomorrow is the 16th which means Baltimore Blogger meetup dinner is tomorrow night!! So excited to meet you ladies πŸ™‚ And don’t worry… i’ve already picked out exactly what I’m going to get haha.

Have a wonderful day!!

I had a lot of symptoms from eating dairy as well and definitely put up with it just like you. I LOVE cheese, but honestly, I don’t miss it at all! I’ve maybe “craved” it once in the last two weeks and that was only when I was starving hungry. I haven’t found a great alternative to cheese that’s not heavily reliant on soy but I know they are out there (make sure it doesn’t have casein in it). Definitely try the Coconut Yogurt I featured on my blog a couple of days ago. It’s great! Do you think you’ll do the vegan challenge to kick start your month? GOOD LUCK!!! You’ll do great πŸ˜€

I totally cried watching Biggest Loser last night too…especially with the two brothers and their emotional reuniting.

Last thing, your comforter looks so cute and chic!

your calzone looks delish – you are so creative with that trader joe’s pizza dough, its such a good deal too!

i think you are making the right choice by trying to avoid cheese – you will probably have more energy as well.

I used to have the same problem with dairy.. I’m not lactose intolerant but whenever I had a LOT of dairy I would feel really sick for the hour afterwards. Your calzone looks SO good! I <333 TJ pizza dough.. especially since its $1 for the whole bag! Can’t wait for next Friday.. have fun tomorrow! Let me know how it goes!!

Ah that calzone looks amazing! Again, I love how you can just come up with things spur of the moment!
Nice work with the pushups too. I love that the 30 day shred has them becasue i love what they do for my arms!

  14. April 15, 2009 7:00 pm

I’m not normally a big fan of calzones because they are too cheesy (kind of the opposite problem you have). But yours looks like the PERFECT amount of cheesy-ness for me

Hooray for push ups!! That calzone looks incredible! Sorry about the lactose intolerance – cheese is one of my favorite things 😦

  17. April 15, 2009 9:02 pm

Good job with the pushups!! I started doing 10 every night about a month and a half ago, now I’m up to anywhere from 15-20 in a row depending on what else I did that day and I can feel and SEE the difference in my arms! Pushups are such a basic exercise but they’re SO good for you!!

  18. April 15, 2009 9:36 pm

    that calzone looks soo good!

and i hear you about cheese..i actually just integrated cheese back into my diet being lactose intolerant…i learned from a rep at Cabot that aged Cheddar cheese has such little lactose to bother us…maybe try that? check out their site for more info. πŸ™‚ hope that helps!

  19. April 15, 2009 10:01 pm

as someone who has ALWAYS hated cheese (yep, since the very beginning!) i completely support you in your decision! haha all jokes aside, i’m sure it will be tough but if it helps, go for it! gotta do what you gotta do right?

omg LOVE the biggest loser so much too, these people are seriously unbelievable!

hope you had a lovely wednesday!

  20. April 16, 2009 4:11 am

Oooh I’m jealous of the blogger dinner! Take lots of pictures!
Your calzone cheesyness looks so amazing, but good luck with your month without cheese. If it makes you feel better in the long run, it’s probably worth it.
Hope you have fun tomorrow (tonight?)!

  21. April 16, 2009 7:09 am

    Yummy calzone! Looks great!

I might give the no dairy a shot– I’m lactose intolerant too! I’ve just been too stubborn to do anything about it. Be sure to post some good non-dairy recipes!

  22. April 16, 2009 8:55 am

Nice work with the calzone. It looks really yummy! Good luck with cutting cheese from your diet – I don’t think I could do it!

  23. April 16, 2009 10:42 am

i love your comforter and i’m so jealous you can just go home for lunch! wish i could do that. i can’t wait for TBL finale either! who do you think will win??

  24. April 16, 2009 12:11 pm

Is that duvet cover from Pottery Barn?! If so…we’re meant to be BFF because I have the SAME ONE! πŸ™‚

Your eats look delish! TBL always makes me cry!!! Especially when they get to see their families…I was hysterical watching it on the DVR yesterday! I felt so bad for Laura and her stress fracture. That totally sucks!

Hope you’re having a great thursday!

  25. April 16, 2009 12:13 pm

Love your super creative calzone! I think I know what I should make for dinner! πŸ™‚

Good luck with going dairy free. I have mild lactose intolerance, but yogurt doesn’t really affect me because it has less lactose than milk. Too much milk is another thing..ugh.

    Have a great day! πŸ™‚

That’s really unfortunate that cheese doesn’t agree with you, especially if you enjoy it. I know I would be hard pressed if I couldn’t enjoy melty, cheesy goodness because it physically caused me pain.

Love the calzone – it looks scrumptious!
