wine + chocolate = heaven

Thank you all so much for your kind words and support with my moving situation πŸ™‚ I’m getting excited to see the place tomorrow, and i have a feeling i’m going to love it! It is also 5 minutes away from my work, so i’ll be shortening my commute by 20 minutes. Also, at my job we have the option of working 7-4 or 8-5. If I move into the city i’m definitely going to work 7-4 bc right now I already wake up early enough for that. Getting off at 4 just seems so much earlier than 5 to me for some reason, and i’ll be able to snag a good parking spot by the house. It’s also right on the harbor so I can’t wait to run outside there. It’s got some amazing views. I’ll update you on whats going on dont worry πŸ™‚

yesterday I had one of my beloved pure bars for my snack. I had the chocolate brownie one, i think this one is definitely my favorite flavor. Its so fudgy and delicious. For lunch I had some chicken salad with 2 mini dinner rolls. My mom has a salad club at work, and brought some chicken salad in for it. I got a little bit of it. SO good with craisins in it.

Bikram was so good last night. The owner taught. She always pushes me the best, and I feel like I make so much progress with her. I’m not sure what it is about her style, but she makes you want to see how much further you can reach. I am always wiped out when I leave her class. Love feeling refreshed the next morning though.

I made a new recipe last night! Remember that pineapple stirfry I made a while ago? well it was supposed to be a variation of this Pineapple Cashew Quinoa Stirfry from Veganomicon, and I just didn’t like it. there were about a million ingredients in it, and it was just too many flavors. Well now that I have Veganomicon, I got to try out the original recipe. I’ve never really eaten quinoa before, maybe once before in one of my whole foods salad bar meals, but I dont’ even remember. This dinner was AWESOME! I loved the flavors, the dish was so colorful, and tasted amazing. Simple and sweet. I made the quinoa the night before and refridgerated it so that when I got home last night from yoga I could quickly cook it up in the stirfry. This will be made time and time again. I brought it for lunch today and can’t wait to eat it πŸ™‚Β  I can’t reccomend these cookbooks enough! So far i’ve loved all the recipes. My dad said the carrot cake from Vegan with a Vengeance is the best he’s ever had! It gets better day by day and is so moist. These babies are winners!

I also found out that my box of Torn Ranch wine truffles that I had won from The Gourmet FoodieΒ came in. They were so pretty and had 2 of each flavor. Champagne, Chardonnay, Cabernet, and Port. I had one of the champagne ones and i think i have to say it was the best truffle I’d ever had. It melted in my mouth and the flavor was perfect. the wine and chocolate combination was heavenly! I can’t wait to try the other flavors πŸ™‚ Thanks so much Gourmet Foodie!!

This morning I woke up and had a bowl of oats. Typical bowl you see everyday with some coconut added. I have one spoonful left of Barney Butter, but Lora was sweet enough to give me 2 jars, so PHEW I won’t have a panic attack anytime soon πŸ™‚

No bikram tonight, I’m going to happy hour with some people from work. Its one of the girl’s birthday and I wasn’t able to make it to her party last weekend, so I promised i’d go to happy hour! It’s actually my first happy hour with anyone from my office, so i hope it goes well!

Happy Thursday! Fridays ALMOST here πŸ™‚ i can see it coming!

    hey girl! i just caught up on your post from yesterday, moving to baltimore sounds like a FANTASTIC idea! it’s not too far from me, and i know a lot of people who live and work/go to school in the area and just love it. not to mention a new adventure is always cool if you ask me =)

    oh and the punjab eggplant? LOVE it — i made some brown rice, steamed up some mixed veggies, added “fake steak” strips, and poured about half of the eggplant on top and added chopped tomatoes and it was delicious! just thought i’d pass along the idea!

    in conclusion: yay for truffles, pure bars (still need to try!), lots of different kinds of oats, and it almost being friday! have a great one!

    Congrats on the move! It’s gonna be SOOO FUN!!! I live with 2 roomies now and it’s kinda nice to have ’em around, except it is also super hard to NOT make taking pics of my food sorta awkward. hehehe

    I pretty much love all the food in this post πŸ˜€ The chickan salad sammies look great, as does the pineapple cashew stirfry. It’s one of the recipes I’ve been eyeing up in Vcon to try πŸ™‚ Good to hear it turned out awesome. And those chocolate? Yum.

    Wine and chocolate are two of my favorite things evuhhh! Those look amazing! I’m so happy that V’Con quinoa turned out well this time! Seriously, I love that cookbook and feel as though I don’t need another. Have a BLAST at happy hour with the co-workers! It should be awesome; you’ll make it a good time! Later dear πŸ™‚

    oh my goodness.. i always start with that don’t i? I think its because that is what i always say as i read your posts!

    wine + chocolate= heaven in my opinion too!

    that is so awesome you will be closer to work AND closer to the running trail! I always got off work at 4 and would run after- it was the perfect time because its enough time before dinner and its not always super crowded yet and your not super tired yet either.

    that is so cool the owner taught your class! glad she pushes you- maybe she could show the other insructors how to improve!

    Craisins in chicken salad is such a good idea.

    I think if I had to choose I would go wish 7-4. It is such a struggle for me to wake up, but I think it would we worth is since I would be finished by 4.
