helllooo and happy Monday! It’s chilly and snowy over here in Baltimore today. Wish i was still in school so i could have gotten a snow day!

Lets just put this out there right now: I am 110% satisfied with Vegonomicon so far. So far all of the recipes have been great and i am so happy I bought it! Vegan with a vengeance had a great tofu scramble that i tried too. I just can’t wait to keep trying out more recipes.

Last night I made the chile cornmeal encrusted tofu for dinner. It was awesome. I paired it up with some sauteed cabbage and the otehr half of my sweet potato from earlier in lunch. The flavors went really well together and the taste was great.

THEN i made the pumpkin bread with pecan streussel and let me tell you this was divine. I’m not even exhaggerating when i tell you that this is by far the best pumpkin bread i’ve had. I can’t get over how moist it is and the streussel on top is the perfect touch. I will be making this over and over again, especially during the fall when pumpkin season is full on out. I gave some to my mom to try and she couldn’t believe it was vegan. it was simply delicious. My dad always likes when I try out new pumpkin bread recipes and i can’t wait to hear what he thinks about this one, because this was my FAV πŸ™‚

Meet my blind date. This morning I tried the dates in my oatmeal πŸ™‚ and i fell in love! It added a really nice sweetness to the bowl. For some reason though and I have no idea why… i couldn’t finish my bowl. I only had half of it? It mightttt have been because I was sneaking bites of pumpkin bread while the oats were cooking…;) but either way, weird.

I got an e-mail from the bikram studio saying classes were closed today due to snow 😦 booo. i’m going to do a yogadownload at home for sure. Maybe the core one? that ones a doozy.
For my mid day snack I had half a blueberry granola plank with some stonyfields ff plain yogurt, andΒ lunch was leftovers from last night and a piece of pumpkin bread. i hope my dad eats most of it, because its huge and i have a feeling my mouth will find its way to the pan. haha.

During my lunch break I headed on to whole foods because I just ran out of my vitamins. I had just finished my Nature’s Way Alive vitamins and wanted to try something new. I’d heard good things about New Chapter Organics Every Woman and asked the employee what she thought about the brand. she said that everyone who works there buys this brand and its definitely the best one they carry. I’ll let ya guys know how i like it!

haha either i’m really living under a rock or i’m just oblivious but i finally found out about google reader. WOW this thing is amazing and so much easier than looking through all my bookmarks of all my blogs i read everyday. The numbers keep on going up though! i need to catch up on all of you lovelies πŸ™‚ have a great Monday, see you tonight after dinner!

    I adore pumpkin bread! It is definitely one of my comfort foods.

    Google reader totally revolutionized by blog-reading world. I would be so lost without it πŸ™‚

    The pumpkin bread looks great, as does the tofu. Were both recipes from Veganomicon? I’ll have to add them to the “try” list.

    hahaha isn’t Google Reader great? the only sad part is that you can’t see everyone’s pretty pages regularly! Oh well!

    That stinks about your yoga – the high is in the 70s here today! I thought I was moving to the Rockies, guess not? We’ve had the warmest winter ever!

    I used to take the New Chapter Prenatal vitamins because I heard they were great for hair and nails. I loved them but they are just so expensive! That pumpkin streuzel sounds so amazing. Your tofu looks good, too! YUM!

    Everything you made looks so good, I’ll have to look into buying that book.
    Google reader is my saving grace, but it’s also a pain sometimes like today where I have over 200 things to read, oh well gives me something to do on this snowy day.

    Ahh, the joys of Google Reader. I love it, but when I see all those new posts, I get kind of stressed.

    New Chapter – I’ve only heard good things. All my friends that worked at Whole Foods recommended it.

    If you’re afraid you’re going to eat all the pumpkin bread, I’ll gladly take some off your hands. πŸ™‚

    FEED ME SOME pumpkin bread!!! AHhhhhhh My mouth is opened WIDE. That looks so darn good…I’d eat it with a scoop of cinnamon ice-cream on top. NO, correction, Earl grey tea ice-cream would totally ROCK. Sooo….where the recipe girl? πŸ˜›

    THAT IS THE BEST PUMPKIN BREAD EVER!!! I made it over winter break and ate most of it by myself within three days. It is phenomenal. Soo glad you’re loving the V’con! Watch out for google reader. I just started a month ago, and it will consume your life. It’s worse than facebook (but oh so necessary!).

    I am soo happy you love the cookbooks as much as I do! I have yet to try EITHER of those recipes. I actually heard that tofu was a bit dry, but if YOU say it was divine, I must try it! MmMm.. pumpkin bread!
    I USE NEW CHAPTER vitamins- did you see them on my blog-diggity not too long ago (because I posted a pic)? Anyway, it’s great because it’s more natural & plant-based & easier to absorb. Anyway, I hope you like it!

    oh goodness that pumpkin bread looks PHENOMENAL! I totally wants me some right now!

    We had a ton of businesses closed due to snow too- and we only got like 5 inches- it was all cleared off the roads in about an hour- how silly!

    I did yoga download today too! πŸ™‚

    Besides google reader the website I use to keep track of my blog is bloglines.com I like it more because it will actually keep track of what you have and haven’t read yet.

    I’ve made 2 recipes in Veganomicon already and sastisfied with both – 2 for 2! I made the banana nut waffles yesterday (see my subs) and they were AMAZINGLY DELISH!!!!!!!!!!! hubby loved them! I had 1 extra one leftover and we shared it last night for “dessert” (I was making up my deficit from my 7 miler ;-p )

    the chile cornmeal tofu is def on my list to try!

    yay for loving veganomicon! it’s great. my favorites are the pumpkin ziti with carmelized onions & sage bread crumbs, fudgy wudgy blueberry brownies and chickpea cutlets. that tofu is great, too!
