weekend?

Wooh, I’ve got some catching up to do! As well as some filling in ๐Ÿ™‚ where did this weekend go??? ah it went by so fast!!

I’ll backtrack to Friday. I ended up going to dinner and seeing shopaholic with my mom. We went to a vegetarian Indian restaurant called Mango Grove thats close to my house that i’ve heard a lot of good things about. It was really really good. We started off with some garlic naan, (heaven) and then I got the eggplant curry. It had oriental eggplant, mushrooms, peas, and had coconut curry sauce. It was sooo good and came with some yummy rice. I loveee indian food so much but hardly ever eat it at restaurants. There’s also a really well ranked vegetarian restaurant that I want to go to called Great Sage and its like 10 minutes from my house. I’m going to go with my dad sometime in the next couple of weeks and can’t wait to show you guys the goods!ย

I loveeed Confessions of a Shopaholic. I’ve never read the books which I’ve heard is such a fun read. It was a real feel good movie. Isla Fisher played the part so well!ย 

Sat morning I ate another breakfast cookie before ย I went to yoga 1 with my mom. This is definitely a keeper, I tried it with the raw almond butter and it was still just as good. In yoga we were doing some crazy postures, getting ready to do inversions with chairs! haha you should have seen everyone it was hilarious. After yoga we did a little grocery shopping and what did I find ?? some Dark Chocolate Dreams at the Commissary (the military grocery store)! wooo, i’ve never seen pb&co there before, so I quickly threw it in my basket!ย

My mom decided to use up the rest of the challah bread and made us all some french toast. Now this isn’t my egg white, soy milk kind. This is the buttery goodness that you get at diners. French toast is always a treat, and I never have the real kind so it was extra special. I had it with some bacon and a side of berries. I told my mom she should open up a diner, shes such a good cook.

I went to Bikram yoga at 4 and my roommate from school Lauren came with me! It was so much fun having someone to go with, and she loved it! she lives about 45 minutes away from me though, so she will probably get a membership at the one closer to her. When I got back I had eggplant parm for dinner. At tj’s they have eggplant cutlets and they are so quick and simple. All I did was throw them in a pan with some cooking spray and heat them right up. Simple as that. I added a little italian cheese, some marinara sauce and some sauteed mushrooms and spinach and voila, dinner is served ๐Ÿ™‚

This morning I went to Bikram at 8, so before I went I made a breakfast smoothie. I threw in half a banana, spoonfull of dark chocolate dreams, soy milk, squirt of agave, and a big handful of spinach. It was the perfect amount to get me through the class. The owner of the studio was teaching again today and i really do love her the best. She pushes us to our own personal limits and i know that at times when i feel like i don’t want to do anymore she’ll say just the right thing to get me refocused and push myself a little further. This was the most i’ve sweat so far in class, phew its like i just threw myself into a pool with all my clothes on.ย

I made a buffalo chicken, pepperjack cheese, spinach, and avocado wrap for lunch. YUM! this was GOOD ๐Ÿ™‚ I also baked up half a sweet potato on the side. I’ll be using the other half for dinner tonight. The wrap is a whole wheat hand made wrap that they sell at TJ’s. It really tastes so fresh when you heat it up. My favorite wrap for sure. I also finally bought some DATES! I tried my first one today with some Barney Butter and wow i can’t believe i’ve been missing these. It was amazing and would be the perfect little dessert. Tomororw morning i’m going to chop some up and add them to my oatmeal and see how i like it.ย

So i’m almost certain i’m going to run the 4 mile race in NY on St pattys day. After deciding this, I realized well i should actually probably get my butt running huh? So I went out for a 4 mile run. It wasn’t the best time but at least I can do the distance, so now I have 3 weeks to get the time down. This will get me in a good place for my 10k which is a month after the 4 mile run. I hope it will give me a little confidence boost too.

Wow thanks for reading this whole post, it was a bit of a doozy.

OOH, and I also woke up this morning to find that I won the Skinny Bitch workout dvd from Amanda at RuntoFinish! i’m excited ๐Ÿ™‚ i loved the book so I can’ t wait to see if i like the video. Thanks amanda!!

    WOW – great weekend! So glad you won the skinny bitch and loved shopaholic – awesome! Your food looks great- those eggplant parm patties are smart and that wrap looks so good! We found a mini george forman grill in a random cabinet (think it was my roommate’s in college and somehow ended up with me?) and so now I can make wraps like you!! Yay! Great workouts too – you rock!

    I really need to find a good place to do bikram..it’s really expensive around here though..at least seems that way to me.

    I’m also thinking it’s time to start making these smoothies..do you just do them in your blender? any tips?

    Everything looks great! I wish I had a Trader Joes here becasue they have so mnay great things I see all over the place. What kind of buffalo chicken did you use in your wrap?

    Wowzerz – you’re becoming quite the little yogi! I can’t wait to buy my membership this week. You’ve definitely convinced me that can and will go often. ๐Ÿ™‚

    Way to go on the 4 miles, too – you’ve got a few weeks and I’m sure your race time will be incredible! You’re going to rock the 10K next month!!!

    Wow, do you practice yoga everyday, or am I imagining that? That is spectacular! So was your run- I can’t force myself to run at all. So glad you found DCD- it’s sooo delicious! Have a great sunday night!

    French toast is my favourite breakfast to order when I go out. Probably because most breakfast options are centered around eggs, and I don’t like them.

    The wrap looks excellent as well!

    I am so with you- what happened to the weekend? I’m glad you liked that movie- I totally want to see it. I have loved Isla since wedding crashers- she totally made taht movie! What yummy looking french toast- tell your mama I’ll be over for bfast tomorrow ๐Ÿ˜‰
