woohoo tomorrow is friiiiidayyyyyy!

I’m glad you guys enjoyed my little facts about me πŸ™‚ give ya a little more insight of what i’m all about.

Yesterday for lunch I had a yummy shrimp salad sandwich. My mom made some and it was so good. I had it on an arnolds thin with spinach and sprouts. Those dang shrimpys kept falling out though lol.


So last night I officially signed up for my month yoga membership, yahoo! Can’t wait to keep at it and see how my body reacts to it. i think its loving it though. It pushes me harder every day and i love that feeling.

After yoga i came home and made my vegan pineapple cashew fried rice. ehhh sad to say it really didn’t turn out as planned. I made a few mistakes. numero uno= should have used either day old rice or at least let the rice cool. I bought the brown rice already cooked from tj’s and all you have to do is microwave it but i didn’t cool it so the rice was wayyyy too sticky and the consistency of the fried rice wasn’t right. numero dos= shake the coconut milk in the can. oops. didn’t do that, and it had seperated so i pretty much just put the thickest part of the milk in there. didn’t help with the stickiness factor. The flavors were really good but it was SPICY! and i love my spice but this one had me sweating. Eh, not the best dinner but oh well, at least i tried it out.


However…. when i came home my beloved Vegonomicon and Vegan with a vengeance came in !! How happy was I to see these guys??


I spent the rest of my night going through the cookbooks. There are a ton of great recipes and also a recipe that was similar to my fried rice but used quinoa. i’m going to try that one out another time and hope that ones better. I saw that Jenna on Eat, Live, Run used it for one of her meals and said its awesome so that gives me some hope!Β  I seriously can not wait to crack out these recipes. Of course the most amazing sounding part of the books were the desserts. Oh my.

When I woke up this morning I decided to give a new recipe a shot. I made scrambled tofu and put it in a wrap. it was really easy to make and was in Vegan with a Vengeance. It really surprised me how much teh consistency was almost exactly the same as eggs. And it kept me really full during the morning. Cha Ching! winning recipe πŸ™‚ I also made a small smoothie to go with it since I was craving some fruit. I’m loving this smoothie combo now, I guess I just had to give my tastebuds a little time to get used to those flavors.



The bars came back today! I had a white chocolate macadamia nut cliff bar for my snack and boy did i miss these babies. This flavor is awesome and i’m so glad i haveΒ a few left in my stash.

For lunch I had some Maranatha raw almond butter with my 9 grain bread. This bread really makes the sandwich so much better. Fresh bread does wonders. At work a group had a catered lunch and they brought some leftovers. I snagged a bite size roast beef sandwich and grabbed some roasted red peppers and grilled zucchini to add to the bite. Soooo yummmy. And i love mini everything, so this was super cute to eat. Don’t you love the little tag on the sandwich haha.



Can’t wait for yoga again tonight! and then for tomorrow to be Fridayyyy! I’m gonna get a nice run in tomorrow too. I’ve got some major organizing plans this weekend. I’m going to go through all my stuff and declutter! i can’t wait to give away all my clothes i don’t wear and just go through everything and make my life a little less messy. ah its going to feel good when i’m done!     I really should invest in those cookbooks; I love reading and finding new recipes!
    I love a good room cleaning, too…makes my brain feel less cluttered when I can finally see the floor again, haha.

    I really cannot wait to hear how the yoga goes. I’m thinking about doing the same thing starting mid-March.

    Good luck purging all your old clothes- it’s a lot of work up front, but I always feel so refreshed afterwards!

    I’m in need of some new cookbooks maybe I’ll grab these.
    I’ll be doing the same thing this weekend, cleaning and decluttering. I’m glad to hear you’re doing it too so I won’t be the only one slaving away!

    I NEED those cookbooks! And I really need to clean my room. I hate when priorities must rest on the back-burner because of school obligations! Bleck. I also really need to blog about those 25 things πŸ™‚ Tonight, I’m realllly hoping.

    Yeah, I realized after I posted that title that it was pretty misleading…but I applied to a dietetic internship in Baltimore, so maybe we’ll be neighbors sometime soon! πŸ™‚

    Love the shrimp sandwich! I need to do that with my bedroom too! My drawers are stuffed to the point where I can’t close them and I don’t wear half the stuff! Thanks for the reminder!

    the rice still looks good i think! and YES the coconut water is really good!!! both the vita coco and ONE brands i’ve tried and really like both πŸ™‚

    dang you have no idea how huge a fan i am of mini things. If it’s mini, i’ll get it/eat it/taste it….you name it. They’re just SOOO cute!! Dang I love that lunch shrimp0-wich you have there. If only they serve that at….McD’s….heehee

    V’con rocks my world! I forget exactly what it’s called, but make the pumpkin crumble cake stuff. It is phenomenal. I ate 3/4 of it myself. I’m really interested to see how this yoga goes for you. I feel like I’m constantly being told by the universe that I’m meant for yoga, yet I’ve only done it a handful of times. Maybe you can motivate me! Have a great night, girl!

    The rice dish still looks good to me! In Vcon I love the black bean burgers and lower-fat banana bread! Two recipes I always go back to.

    OH MY GOSH. That shrimp salad looks heavenly – i LOVE seafood! How did you cook the shrimp? Kudos on the cookbooks I should invest in some of those! Your mini sandwich is cute!

    aww, congrats on joining yoga for a month! i can’t wait to hear about your further experiences at your studio, since that’s something i’m contemplating too.

    also, the recipes from those cookbooks always look great! i should add those to my amazon wishlist already πŸ™‚

    Congrats on the yoga decision!!! I am sure you’ll be pleased!
    That is so funny about the cookbooks because those 2 were the 1st 2 I bought… both on Amazon! I love them & get them out regularly. Quinoa is a super-food you MUST incorporate more. Actually there is a “Pineapple-Cashew-Stir-fry that is similar to your “fried rice” but uses quinoa, veggies, cashews… mmm great!

    sorry ur fried rice didnt quite work out – you should definitely try the quinoa – I made some the other night and its delicious, and really super filling too!

    I love fried rice! Def use day-old rice next time. Fried rice is how I use up my leftover rice from previous meals.
